I have 2 cats (7/8months old) adopted froma caterry 2 months ago. They've stopped gobbling down their food straight away, and sometimes don't even finish it over the course of the day. One has also become less energetic about the house and is cat-napping a lot more. They purr readily&don't seem in discomfort. Is this behavior change just a sign that they've settled into their new quiet life after time in a busy cattery?

Yes, I think that would be a reasonable assumption. Based on your description they sound like normal cats. Just keep a close eye on them and if you notice that are not eating at all, vomiting, having diarrhea, etc. then they should be examined by a vet.
